(1) Fat :

  • The fat content of camel milk ranges from 2.7-3.6%
  • Camel milk is naturally homogenized milk. Because the average size of fat globules in camel milk (2.99 um) is generally smaller than in cow/buffalo or goat milk (3.19 um).

(a) Fatty Acid Profile:

  • Camel milk, fat, has a higher content of long-chain fatty acids and a lower content of short-chain fatty acids than cow’s milk fat.

  • The cholesterol content in camel milk (25.63 mg/100g) is lower than in cow milk (35.40 mg/100g).

(2) Carbohydrates (Fibrous matter):

  • β-casein is the major casein present in camel milk. β-casein is about 65%, while α-casein is only 21% of the total casein.
